The "best" option available under Properties is to only update when launching the game. There is no option to block all updates. Just wanted to mention this since your guide for installing says Updates should be turned off.

Steam made that change a few weeks ago. Before that, that option was available.
Will that cause Steam to override your patches? I'm assuming no.
So far it seems like they changed the text but the functionality is the same as before.
there is no more official support so it will never update.
