presumably removed at first to stop the "sitting on the wing looking for prey" cheat that is now fixed I assume (since your head is forced back in the cockpit at any sort of speed) and never put back.
Probably another of those little things that compete with the limited time and resources the Devs have sadly.

I never flown a messerscmith since alpha stage, if you open canopy in air, will it not fall off?
If you can open a 109 canopy at 300Km/h you are the HULK!
Its the jettisoning of it rather than opening that Rich misses - in BOS you can only bail - you cant bang the hood stay in the aircraft to get that wind in your Hair feeling..... Sometimes you see it in CLoD but it seems to be used here more as a ruse by the dastardly blues to fool the trusting and honourable tommy into thinking they are spent. Personally id sooner be shot down than listen to the racket that it makes. Bad for the digestion all that noise.

In EA Bf 109 cockpit are jettisionable but people are using as exploit in MP for have better visibility (like open canopy for use the Batfink Super Sonic Sonar Radar in others flight game ) and was removed allegedly due this.
But be leave the canopy open in takeoff or flying slow they will end be blowing off when speed increase, so...

BTW - spitfire pilots opening their canopy in flight to get a better view is a myth...
There is no way they would allow their hair to get messed up by the wind or risk losing the autographed dash pic of themselves to the slipstream
