With the warning that being used to real-world flight controls, I am pickier than most, I completely sympathize with your problem. I have yet to try a set of Sim flight controls that do not feel overly sensitive. It will take some time getting used to the feel of your joystick and adjusting joystick curves to get the right level of response you are seeking. Trial and error is the way. It is a personal preference.
Having said that, I use a Saitek X-52 Pro HOTAS, with CH Pro Pedals. It is not fantastic, it is just OK. It is however much better than cheap joysticks. If you have an inexpensive joystick, trying to get the right feel is a lost cause. If you want to enjoy this Sim a little you will need a good setup. Save, endure, get medium-high grade stuff at least. Spend a few hours setting it up right, then forget about it and "fly."
Some flight controls are in the thousands of dollars (euro, whatever). I do not think you need those to enjoy the sim, but cheap stuff kills the fun.

I have a Thrustmaster Hotas X v2 model...its ok... i guess but nowhere the quality of my old CH products flight stick...
Maybe its this that is the problem in part.... it does have the separate throttle which i enjoy and plenty of buttons for settings...
Open to suggestions indeed..

To adjust the 'sensitivity' of your joystick (or any other axis) got to controls >axes tab (in cliffs of dover)
Click on an axis. At the bottom right of your screen you will see two horizontal bars. One is marked IN for input one marked OUT for output.
You will also see a 'sensitivity' slider. Move the slider all the way to the right (to a value of 1.00), then move the corresponding axis you are adjusting and watch the IN & OUT bars. The IN bar will correlate with how much you are physically moving the stick, the OUT bar will correspond to how much movement is being transferred to the relevant control surface in game. So with it at 1.00 if you move your stick 50% of the available movement you will see the IN Bar move 50% but the OUT Bar will move less than this. = Non linear movement
Now slide the sensitivity slider all the way to the left to 0.00. Again move your stick 50% and you will see that both the IN and OUT bars move exactly the same = linear movement
In both cases if you move the stick 100% of its travel the OUT and IN bars will reach the full distance.
So setting a higher amount on non - linearity will make the stick feel less sensitive in the early part of its range and do the opposite towards the end of its range.
So the higher you set the sensitivity value, the less sensitive the stick will feel (most of the time).
Confused yet?
Everyone is different in their preference so you may have to experiment to find what feels right for you. Setting the slider as follows is a good starting point and you can tweak from there
Ailerons 0.5
Elevater 0.75
Rudder 0.7

isn't that close to driving a tank (or bomber)?
i heard from a Spit pilot that the control stick was very sensitive, so i kinda try to emulate that
Ailerons 0 or near (ultra-responsive)
Elevator 0.15-0.25 (to emulate the movement range of a real stick plus some sense of weight)
Rudder 0.5 (to mitigate the wobbling effect of small inputs)
Pfff...! Those settings are sooooo last week
For what it's worth I'm on:
Ailerons 0.25 (Bringing balance to the Ailiery Force)
Elevator 0.25 (Classic Elevation with just a hint of Seasoning)
Rudder 0.75 (Ruddy perfect!)
Seriously though... this is gonna be different for everyone. Though I think most of us settle with more damping on the rudder than on the stick.
When I was messing about with this I'd fly for a week with each "new" setting... and then compare.

Is not possible have the "real feel" with domestic joysticks. And probable an "real fell" make annoying control the (virtual) plane, specially in combat.
See what this guy - a professional pilot, say about VKB Gunfighter - who are ways ahead most of joysticks available in mater of "feel" due "dry-clutch".
Who remind Ubi'Zoo times, Eric "Winkle" Brown curve settings fro 1946 for leave the plane control as he are used to fell don't please any of 'virpilot' because plane response became much more slow.
