    Calling all Spaniards

    This is important and I'm getting mixed feedback from my Spanish friends. Most of whom don't cook... (which is actually nonsence... they all claim that and are all brilliant at it none the less) so... teh question:

    its a simple question based around the materaisl used in the humble paella dish


    Plain steel or enameled?

    What does your grandma use? Grandmas know everything !

    You can use any wide pan, the most important thing are the ingredients

    My mother cooks it on this 91Sq7HHcvkL._SL1500_.jpg and its sooo delicious , or this one if we are outside CDAC5758_1.jpg

    cast iron frying pan has previosusly been my go to "Valencia Approximation Equivelent #1".

    but.... today I got a propper Spanish made pan. An enameled one.

    Will be test driving it tomorrow evening

    Certainly dangerous, but cute?



    Highseas, if you mean to ask real grandmas, not those charming young ladies of my age who happen to have grandchildren, I think the answer can only be cast iron.

    I do have a pot, inherited from my mum, that weighs about a ton. It is indestructible and perfect not only for spanish stuff, but for anything like goulash, gumbo, chili con carne, bigosh, stew etc.
    And another big advantage: my wife can't throw it at me (at least not very far ...)

    I have a load of cast iron cookware. its non stick. not stick, and... well both of those things... so...

    what i want to know is about the best paella pan.

    and next week we move to Portugal an talk Cataplana... but i've have that one covered for about 18 years now !!

    The material of the paella with which it is made - we were very close to buying a stainless steel paella pan. We were already walking to the cashier to pay and at the last moment we changed our decision. The stainless steel paella pan is super good and will serve for many years. But you have to know how to keep it. After cooking the paella, you have to clean the paella pan, put some olive oil in the paella pan and put it in a plastic bag. You have to do it so that next time when we use it, the food / paella does not come out with a metallic taste. And also this paella pan only serves to prepare paella.

    Good advice - here are mine after about 20 years of usage: The small 2-person, and the big 10-person. For the latter a special gas-ring with a bottle is needed.

    Here's one I made earlier


    Last Sunday in fact !

    I'm not a Spaniard, but I live in Spain if that counts. I use this multipurpose nonstick pan and it's great.

    I like the bottom of my paella to be well done but that's a pain in the arse to clean in metal pans. All it needs is a bit of a soak and it washes off nicely in a nonstick

    Me too. A bit of cripsy base is a good thing i think.

    As a side note, paella is the name of the recipient, it means pan in valencian.
