Hi, welcome to the ATAG forums. The best guides are definitely Chuck's Cliffs of Dover guide or the Team Fusion flight manuals in the wiki linked at the top of the page.

Chuck's guides are more in-depth about all of the functions of each aircraft but are a little dated and don't feature newer additions like the Beaufighter. The TF guides are more about basic controls and engine settings at various stages of flight. Both will be useful to get you up in the air.
