I use Nvidia surround and my resolution is 5760x1080.
My problems are 1. spotting other air craft and 2. The enormous sun glare.
Anybody got any tips please?

The higher the resolution, the smaller those distant contacts are.
There are two ways to increase that black dot. Decrease resolution, until you get used to it, or increase the size of the monitors. Obviously, the latter is not optimal.
Spotting contacts takes a little practice in the beginning. I'd recommend trading some eye candy for spotting ability by lowering your resolution temporarily. When you get better, increase again.
Also, I believe 'Anti-aliasing' rounds the corners of pixels to make them smoother. Reducing that number can sharpen the corners, making the 'contact' more visible from a distance. (at least, I think that's the one.)
Spotting is a skill you acquire with time, it's not just about resolution or pixel sizes.
