From the stories I've heard of them from the war, they were the ones to often make it back even with remarkable damage.
You have to remember that you're firing a pair of heavy machine guns, not cannons. And the the Bredas are really mediocre guns at best with regards to muzzle velocity, rate of fire and weight of fire. The Italians had HE rounds for the Bredas but the explosive filler in them was tiny and a fraction of what you'd find in a typical 20mm HE round. Structural damage therefore definitely is not a strong point of these guns.
That said the Bredas have good penetration and can easily defeat the armor found on any aircraft currently in the sim out to a few hundred meters, so pilot kills are very common provided you can pour an accurate burst into someone's cockpit. Engine & fuel tank fires are also a common sight.
Its not scientific I know, but from experience of being shot in Hurris and Spits (Too much Experience) the hurri seems to take a bit more damage and still be flyable, enough to be able to get to a reasonable height and speed for bailing out or controlled crash landing or ditching

I'd try a mix of API and HE, the AP round does nothing API cant do as well. HE is still a viable option because it can render control surfaces useless more so than Ball, AP or API does.
The way to kill with the Italian 12.7mm guns is to fire at the cockpit of the enemy aircraft and kill the pilot.
The 12.7mm AP rounds have good penetration and the guns are centrally located so they are quite accurate.
The rounds will go through British back of the seat pilot armour.
Trying to shoot off an enemy aircraft's wing is not a productive way to use these weapons.
