Hello there i have mine all the way left on Zero for all 3 axis. Its very sensitive in the plane and takes a lot of getting used to but its fine for me.

This is very personal.
It depends on the plane you fly and also type of joystick you use (hard/soft, short/long stick)...
At 0 it is most sensitive. The output = the input. The slightest movement of the joystick is directly impacted.
Advantage: faster reaction.
Disatvantage: more difficult to stabilize, increased risk to enter into a spin.
At 1 is is least sensitive. The output follows a softer curve, so you need bigger joystick movements for same effect. At the end of the joystick movement you get the full value anyway, so it is only less sensitive, but gives same result at the extremes.
Advantage: more stable, less risk to enter unwanted spin, larger joystick movements better emulates real life sticks.
Disatvantage: slower reaction.
After having spent a long time on 1 for all axis (easier when you are a beginner), I am now happy with 0.5 for all axis.
Also I have a small 0.02 zero deadzone to keep it stable when neutral.

Sums it up very well too.
I tend to calibrate my stick to zero every few weeks... It is on a long extension and has an adittional diy brake lever axis which unbalaces it and has an eefct on the internal springs over a relatively short period.
Im very happy with it... but it needs regular recalibration. (no biggie)
As I recalibrate it so often I dont boither with a dead zone on that.
I do have a dead zone of 0.02 on the rudder pedals as well.. only calibrated them once.
That dead zone is mainly because I'm using them as a foot rest when not flying.. and my feet are amazingly heavey when I fly !!

Look in C:\YourPCName\Documents\1C SoftClub\il-2 sturmovik cliffs of dover then open the conf.ini file ( Open it with Notepad ) then search for the section named [rts_mouse]
Tip: Before making any modifications to it make a backup copy of it just in the case that something could go wrong!

Note that that section affects only the mouse. There are no settings visible in the game about it. After have made the modifications to it you'll notice the different mouse sensitivity only by directly using it ( [rts_mouse] )
There's an easy test you can do to check that your modifications are working.
Spawn in the game for example in a Bf 110, go to the rear gunner and note how the gun moves up and down when you move the mouse ( Remember to remove the mouse arrow from the screen or the gun will not move using the mouse. " Toggle independent mode " key to remove/display the mouse arrow on screen ). Once done exit the game, open the conf.ini file and go for this section:
[rts_mouse]
SensitivityX=1.0
SensitivityY=1.0
SensitivityZ=1.0
Invert=0
SwapButtons = 0
Change invert to 1 ( Sample: Invert=1 ). Save then restart the game and spawn again in the Bf 110. You will notice now that, when moving the mouse up and down, it will works in the exact opposed way in respect to before ( because you have inverted the way in which the mouse axis works )
The ones you're searching for are located instead in the confUser.ini file ( Aileron, Elevator, Rudder ). The numbers you see corresponds to which sensitivity settings you have set in Options--> Controls--> Axes--> ( Sensitivity, 0% and 100% Dead Zone ):
